Raw Ice Cream

Whew! It wasn't easy but I finally did it. Green Tea Mullein/Nettle Ice Cream. Lately I've been seeing more and more raw ice creams popping up in the freezer section of health food stores in my area. A few of them are actually very tasty, but they're a little expensive at around $14.99 a pint. Growing up, green tea ice cream was my favorite. So this is my take on it.

This recipe took A LOT of trial and error. I started with some homemade cashew milk. Cashews, kangen water, dates and avocado. Once finished I strained it and froze. Then I blended 3 young coconuts (coconut meat and water) until smooth and froze. Next I made some mullein and nettle tea. Mullein is great for expelling mucus, safe for kids and has a really pleasant flavor. Nettle isn't as pleasant tasting so I only used a bit of it for color, but it is also safe for kids, a great source of iron, a detoxifier, blood purifier and great for allergies.

Adding herbs to raw treats like this is a great way to get children to eat healthier (without them knowing it). *Just make sure you know about the herb in question i.e. side effects, interactions etc. Anyhoo, I strained the tea and poured it in some ice trays. Later the following day I combined the ingredients in the food processor along with some agave nectar to taste. That's it!

(Technically it isn't 100% raw but to make it more raw you can soak the mullein and nettle in water overnight instead of steeping them in boiling water :)
